摘要
由于公共厨房内综合功能较多,蒸煮、烹饪、热加工等易产生大量的油烟、蒸汽和臭气[1],严重干扰了厨房工作人员的生活健康和居室卫生质量;厨房炉灶以天然气为主要能源,但它的着火及爆炸风险主要来自于这些具有高爆炸危险的易燃燃料,以及由于设备管件等失灵、管道阀门泄露等;当燃气浓度超过相应的爆炸下限后,遇明火及热源时可能产生燃烧和爆炸,须在厨房相应的位置设置事故通风系统。因此,正确规划设计厨房通风空调系统,能更好地创造一个舒适且安全卫生的工作环境更显得极为重要。
Due to the multiple comprehensive functions in public kitchens,steaming,cooking,and hot processing can easily generate a large amount of oil fume,steam,and odor,seriously interfering with the health of kitchen staff and the quality of living hygiene.The kitchen stove mainly relies on natural gas as its main energy source,but its fire and explosion risks mainly come from these highly explosive flammable fuels,as well as from equipment and fittings malfunctioning,pipeline and valve leaks,etc.When the gas concentration exceeds the corresponding lower explosive limit,combustion and explosion may occur when encountering open flames and heat sources.An accident ventilation system must be installed at the corresponding location in the kitchen.Therefore,it is extremely important to plan and design the kitchen ventilation and air conditioning system correctly to create a comfortable,safe and hygienic working environment.
