摘要
铁路站车作为人们出行过程中的重要节点,其膳食服务与旅客旅行体验、健康紧密相关。采用抽样调查与实地检测相结合的方法,对某铁路单位不同站点、不同时间段站车膳食开展调查,在分析存在的主要问题和影响因素的基础上,对食材采购与供应链管理、加工与储存等环节提出改进建议,并结合铁路站车膳食的卫生监管和信息公示内容,优化铁路站车膳食管理思路,以期进一步改善铁路站车食品安全管理。
As an important node in people's travel,the catering service of railway stations and trains is closely related to passengers'travel experience and health.Using a combination of sampling survey and on-site inspection,a survey was conducted on the meals of different stations and time periods of a railway unit.Based on the analysis of the main problems and influencing factors,some suggestions on food purchasing and supply chain management,processing and storage are put forward.Combined with the contents of hygienic supervision and information publicity,the ideas of food management in railway stations and trains are optimized,so as to further improve the food safety management in railway stations and trains.
