解密花青素性质的科普实验

摘要 采用水溶剂提取的方法提取植物中的花青素。通过光的吸收实验分析花青素颜色变化的原因,探究酸碱度、温度、光照、金属离子等因素对其稳定性的影响。通过粉条褪色实验和体外自由基消除实验,说明花青素具有较强抗氧化作用和清除自由基能力。通过简易的操作,明显的颜色变化,科普花青素的变色原理,作为酸碱指示剂的实际应用及其不稳定性和抗氧化的性质。期望借此科普实验让公众深入了解花青素的性质,增强辨别真伪的能力。 The anthocyanins in plants were extracted by water solvent.The reason of anthocyanin color change was analyzed by light absorption experiment,and the influence of pH,temperature,light,metal ions and other factors on its stability was explored.The experiment of powder fading and free radical elimination in vitro showed that anthocyanins had strong antioxidation and free radical scavenging ability.Through simple operation,obvious color change,the color change principle of anthocyanin,its practical application as an acid-base indicator,its instability and antioxidant properties were popularized.It was hoped that this popular science experiment would enable the public to deeply understand the nature of anthocyanins and enhance their ability to identify authenticity.
