摘要
随着经济的发展和生活水平的提高,人们对饮食结构越来越重视。小米富含碳水化合物、蛋白质、脂肪、膳食纤维、维生素等营养物质,以及酚类、活性肽、类胡萝卜素、低聚糖等功能活性成分,具有降血糖、降血脂、降血压等多种保健功能。然而,小米品种及种植地对小米中的各种营养物质及功能成分影响较大。因此,通过对不同产地及不同品种的小米中的营养成分进行综述,为利用小米进行饮食结构调整做基础研究。
With the development of economy and the improvement of people's living standards,people pay more and more attention to the diet structure.Millet is rich in carbohydrates,protein,fat,dietary fiber,vitamins and other nutrients,as well as phenols,active peptides,carotenoids,oligosaccharides and other functional active ingredients.It has many health functions such as lowering blood sugar,lowering blood lipid and lowering blood pressure.However,varieties and planting areas have a great influence on various nutrients and functional components in millet.In this paper,nutritional components and functional factors of millet in different producing areas and different varieties were summarized,adjustment of dietary structure by millet conducted to provide reference for the research.
