果蔬保鲜技术发展现状探析

摘要 果蔬保鲜在促进果蔬行业的良性发展和提高人民生活水平等方面具有至关重要的作用。首先,结合保鲜机理对传统保鲜技术的保鲜效果和存在的问题进行分析;然后,对近年来逐渐受到关注的壳聚糖复合涂膜保鲜技术的发展现状进行介绍;最后,对现有保鲜技术的不足和未来发展趋势进行总结和展望,旨在为果蔬产业的健康发展提供一定的理论依据。 Fruit and vegetable preservation plays a crucial role in promoting the healthy development of the fruit and vegetable industry and improving people's living standards.In this article,the preservation effect and existing problems of traditional preservation techniques were analyzed based on the preservation mechanism firstly.Then the development status of chitosan composite coating preservation technology,which had gradually gained attention in recent years,was introduced.Finally,the shortcomings and future development trends of existing preservation technologies were summarized and prospected.The purpose of this article was to provide a certain theoretical basis for the healthy development of the fruit and vegetable industry.
