蛋白质组学在食品和化妆品质量检测领域应用发展探究

摘要 蛋白质组学研究是继基因组学研究兴起之后的又一新兴领域,为相关科学研究提供了全新的思路和技术,已在药品和生物制品领域得到了广泛应用。近年来,蛋白质组学技术开始逐渐被应用于食品和化妆品检测领域,有望为开展食品和化妆品安全、质量控制等研究提供有力手段。本文主要综述了已应用蛋白质组学技术进行研究的食品和化妆品种类,并介绍其技术流程特点,对分析流程中亟待解决的技术难点进行了剖析。蛋白质组学技术具有其他传统方法不可取代的高准确性、高通量的检测优势,同时需要注意,其在食品和化妆品检测领域的方法回收率低、标准物质研制滞后等主要问题仍有待克服。 Proteomics research,emerging after the rise of genomics,provides new ideas and techniques for related scientific research and has found ample applications in drugs and biological products.In recent years,proteomic techniques have gradually been applied to the field of food and cosmetics detection,offering a powerful means for research on the safety and quality control of these products.This paper reviews the types of foods and cosmetics studied using proteomics techniques,introduces the characteristics of their technical processes,and analyzes the technical difficulties in the analysis process.Proteomics technique boasts high accuracy and throughput,which are irreplaceable compared to traditional methods.However,challenges such as low method recovery and the lagging development of reference materials still need to be overcome in the field of food and cosmetics detection.
