摘要
本文简单介绍了番茄红素,采用界面聚合法制备了番茄红素微胶囊并对其稳定性进行了研究。番茄红素微胶囊的热稳定、光稳定和金属离子的稳定性要明显优于番茄红素粉剂;抗坏血酸可提高番茄红素粉剂和微胶囊的稳定性。
Lycopene was introduced briefly.Lycopene microcapsule was prepared by interfacial polymerization and stabilities of the lycopene microcapsule were studied.The results showed that thermal stability,light stability and metal ion stability of lycopene microcapsule were obviously better than lycopene powder;Ascorbic acid could improve the stability of lycopene powder and microcapsule.
