葡萄皮渣花青素提取工艺研究

摘要 以云南夏黑葡萄皮渣为原料,首先研究了料液比、乙醇体积分数、提取时间、提取温度等单因素对葡萄皮渣花青素提取率的影响,进而采取正交试验将提取工艺进行优化。结果表明,葡萄皮渣花青素提取的最佳工艺条件为料液比1∶40,乙醇体积分数50%,提取时间35 min,提取温度50℃,葡萄皮渣花青素的最大提取量为10.605 mg/g。 In this experiment,the influence of solid-liquid ratio,ethanol concentration,ultrasonic time,ultrasonic temperature and other single factors on the extraction rate of anthocyanin from Yunnan summer black grape residue was studied.Orthogonal experiment was adopted to optimize the extraction process.The results were as follows:The optimal extraction conditions were solid-liquid ratio of 1∶40,ethanol concentration of 50%,ultrasonic time of 35 min and ultrasonic temperature of 50℃.Under these conditions,the maximum yield of anthocyanin from grape peel residue was 10.605 mg/g.
