肉类食品掺假问题的分析研究

Analysis of Meat Product Adulteration Issues

摘要 近年来,国内外肉类食品非传统食品安全事件时有发生,其中肉类食品的掺假行为更是屡见不鲜,这些食品领域的经济利益驱动型掺假事件给食品安全带来严重危害。本文以“某品牌火锅假羊肉”事件、欧洲“马肉风波”等肉类掺假事件为案例,对国内外肉类食品非传统食品安全问题,特别是肉类掺假问题的历史情况及现状进行分析,通过梳理国内外肉类食品安全法规标准和肉类掺假鉴别的检测技术,剖析肉类掺假事件发生的原因及可能造成的后果,同时对肉类掺假问题的处理方式以及政府监管措施、企业风险防控、检测技术研发、相关标准制修订等问题展开讨论,最后对下一步如何治理肉类掺假问题提出展望。 In recent years,non-traditional food safety incidents of meat products,especially economically motivated meat adulteration occurred frequently worldwide,which have posed serious threats to food safety.By the review of cases including the"Banu hotpot fake mutton incident",the European"Horsemeat scandal"and other meat adulteration incidents,this paper analyses historical and current situations of non-traditional food safety issues of meat products at home and abroad,particularly meat adulteration.In addition,the causes and possible consequences of meat adulteration incidents were analyzed by combining domestic and foreign meat product safety regulations,standards,and detection techniques for meat adulteration identification.Furthermore,some solutions to meat adulteration are discussed.Finally,prospects for solutions to meat adulteration are proposed,including government regulatory measures,enterprise risk prevention and control,testing technology research and development,and related standards.
