摘要 随着人们生活水平的不断提高,食品安全逐渐成为社会大众关注的核心问题。牛肉作为广受欢迎的肉类食品,其质量安全尤为重要。然而,近些年牛肉中掺入瘦肉精的非法行为频繁出现,对消费者的健康安全构成了严重威胁。本文概述了牛肉中非法添加瘦肉精的背景及原因,深入分析了瘦肉精在牛肉中的非法添加对消费者健康造成的潜在危害,并着重探讨了多种瘦肉精检测方法,以期为牛肉的质量安全监管提供参考。 With the continuous improvement of people’s living standards,food safety has gradually become a core issue of public concern.As a popular meat food,the quality and safety of beef is particularly important.However,in recent years,the illegal act of adulterating beef with lean meat extract has appeared frequently,posing a serious threat to the health and safety of consumers.This paper outlines the background and reasons for the illegal addition of clenbuterol in beef,analyzes in depth the potential hazards of the illegal addition of clenbuterol in beef to consumers’health,and focuses on a variety of clenbuterol detection methods,with a view to providing a reference for the quality and safety supervision of beef.
