摘要
叶酸是人体必需生长因子之一,具有预防贫血、增强免疫力和促进发育等功效,随着市面上叶酸强化食品越来越多,叶酸的快速检测技术也在持续改进。对食品中叶酸含量快速检测技术的研究进展进行综述,检测方法主要有改良微生物测定法、高效液相色谱测定法、酶联免疫测定法、电化学分析法和荧光分析法等,总结了这些快速检测技术的适用范围和优缺点,期望为从事叶酸检测工作人员提供一定的参考。
Folic acid is one of the essential growth factors for the human body,which has the functions of preventing anemia,enhancing immunity and promoting development.The rapid detection technologies of folic acid in food were reviewed,including improved microbial assay,high performance liquid chromatography,enzyme-related immunoassay,electrochemical analysis and fluorescence analysis,etc.The scope of application,advantages and disadvantages of these rapid detection technologies were summarized,hoping to provide certain references for folic acid detection workers.
