摘要
烹饪与营养教育专业是食品科学与工程类的一个特设专业,烹饪化学作为其主干课程,是一门专业基础课。针对烹饪化学课程教学存在的问题,主要从课程成果确定、教学内容重组、反向教学设计、以学生为中心的教学实施、优化考核方式等方面进行基于OBE理念的教学改革,取得较好的教学效果和学生评价。
The major of Cooking and Nutrition education is a special major of food science and engineering,and culinary chemistry is a basic professional course as its main course.In view of the current problems in the teaching of culinary chemistry courses,this paper mainly carries out teaching reform based on OBE educational idea from the aspects of curriculum achievement determination,teaching content reorganization,reverse teaching design,studentcentered teaching implementation,and optimization of assessment methods.The results achieved good teaching effect and student evaluation.
