贵州省酱香型白酒安全生产现状及对策分析

Safety Production Status and Countermeasures of Jiangxiang Baijiu in Guizhou Province

随着酱香型白酒生产规模的不断扩大,其生产安全问题也逐步显现,相关标准和研究人员从多方面对白酒安全进行了规范和研究,但大多是对所有香型白酒的安全进行规范和研究,或者是对其食品安全进行研究,对于贵州省酱酒因特有的生产工艺、贵州省独有的山地特色产生的一系列安全问题,针对性和指导性不强,风险识别和管控措施不精准。鉴于此,对贵州省酱酒生产安全现状和问题进行了调查研究,并对酱酒生产中的制曲、爆炸区域划分、包装、建筑布局、安全管理等方面存在的安全问题逐一提出了对策措施,旨在为进一步提高酱酒安全生产水平提供思路。

With the continuous expansion of the production scale of Jiangxiang Baijiu,its production safety problems have gradually emerged.Researchers have studied the safety of Baijiu from many aspects,but there are few targeted research on the safety problems caused by the unique production technology of Jiangxiang Baijiu and the unique mountainous features of Guizhou Province,and the risk identification and control measures are not precise.In view of this,this paper conducts investigation on the current situation and problems of the production safety of Jiangxiang Baijiu in Guizhou Province,and proposes countermeasures for the safety issues in Jiangxiang Baijiu production,including Daqu making,explosion area division,packaging,building layout,and safety management.This paper serves to provide some ideas for further improvement of the safety production level of Jiangxiang Baijiu.
