摘要
食品安全学是食品相关专业的主干核心课程,食品安全学的学科基础和学科体系相对较为宽广,学科的综合性也较强。食品安全学与农学中的畜牧学关系极为密切,动物源性食品的乳、肉、蛋皆是畜禽养殖所获得的畜产品,动物源性食品只有在健康养殖的前提下才能保证安全。动物源性食品的安全与否直接关系到人民群众身体健康和生命安全,关系到社会和谐与稳定。动物源性食品安全是食品安全学中的重要组成部分,食品安全学课程教学改革应遵循“从牧场到餐桌”的整体设计原则。因此,食品安全学课程教学内容的设置需要融入畜牧学的相关知识,充分体现学科融合、专业融合、课程融合,基于健康养殖理念下食品安全学课程教学的优化与实践,具有重要的现实意义。
Food safety is the backbone of the core curriculum of food-related professional,the subject of food safety is relatively broad basis and subject system,and the subject is more comprehensive.The relationship between food safety and animal husbandry is very close.Milk,meat and eggs of animal-derived food are all livestock products obtained from livestock and poultry breeding.Food of animal origin can be safe only if it is raised healthily.The safety of animal-derived food is directly related to the People's health and safety of life,and related to social harmony and stability.Animal-derived food safety is an important part of food safety.The teaching reform of food safety should follow the principle of “From pasture to table”.Therefore,the setting of the teaching content of food safety course needs to be integrated with the relevant knowledge of animal husbandry,fully reflecting the integration of disciplines,specialties and courses,and the optimization and practice of the teaching of food safety course based on the concept of healthy breeding is of great practical significance.
