基于荧光PCR法鉴别速冻调理牛肉中的源性成分

摘要 牛肉具有较高的营养价值,因此,在日常生活作为一种比较重要的肉源食物被人类食用。但是,在市场中,一些不法商贩为了谋取暴利,在牛肉中添加其他价格低廉的肉类,以次充好,严重侵犯了消费者的合法权益。据此,为了研究速冻调理牛肉的掺假假情况,本文以13批市售的速冻调理牛肉为研究对象,通过优化其相关标准的前处理方法,分别对其进行牛源性、猪源性、鸡源性、鸭源性及狐狸成分检验。结果发现,13个样品均检出牛源性成分,2号检出鸭源性成分,4号检出狐狸成分,说明有两个样品存在掺假行为,掺假率为15.38%。 Beef has high nutritional value,so it is eaten by human beings as an important meat source food in daily life.However,in the market,in order to make huge profits,some unscrupulous traders add other low-priced meat to beef,which is shoddy and seriously infringes on the legitimate rights and interests of consumers.Therefore,in order to study the adulteration of frozen seasoned beef,this article takes 13 batches of commercially available frozen seasoned beef as the research object.By optimizing the pre-treatment methods of their relevant standards,they are tested for bovine,pig,chicken,duck,and fox components.As a result,all 13 samples were found to contain bovine derived components,with duck derived components detected in sample 2 and fox derived components detected in sample 4,indicating adulteration behavior in two samples with an adulteration rate of 15.38%.
