4种茶叶主要生物活性物质的测定与比较

Determination and comparison of major bioactive substances in four types of teas

摘要 通过比较4种茶叶主要生物活性物质的含量,了解其营养价值。检测并比较绿茶、红茶、乌龙茶和黑茶中茶多酚、茶氨酸、维生素E、维生素C、铜、锌、硒、锰、钙和镁的含量,使用SPSS 26.0软件进行统计分析。结果显示,茶多酚:绿茶>红茶,绿茶>黑茶,乌龙茶>黑茶(P<0.05);茶氨酸:绿茶>红茶,绿茶>黑茶,乌龙茶>黑茶(P<0.05);维生素C:绿茶>红茶,绿茶>乌龙茶,绿茶>黑茶(P<0.05);维生素E:乌龙茶>绿茶>黑茶>红茶(P<0.05);铜:绿茶>乌龙茶,黑茶>红茶>乌龙茶(P<0.05);锌:绿茶>红茶>黑茶>乌龙茶(P<0.05);硒:乌龙茶>红茶>黑茶,乌龙茶>红茶>绿茶(P<0.05);锰:黑茶>绿茶,乌龙茶>绿茶(P<0.05);钙:黑茶>红茶>乌龙茶>绿茶(P<0.05);镁:黑茶>乌龙茶>红茶,黑茶>绿茶>红茶(P<0.05)。不同茶叶的生物活性物质含量不尽相同,各有优势,可根据自身健康需求选择合适的茶叶品种。 Understand the nutritional value of four teas by comparing their content of major bioactive substances.The content of tea polyphenols,theanine,vitamin E,vitamin C,copper,zinc,selenium,manganese,calcium and magnesium in green,black,oolong and dark teas were detected and compared,the statistical analysis tool was SPSS 26.0.The results show that,Tea polyphenols:green tea>black tea,green tea>dark tea,oolong tea>dark tea(P<0.05);Theanine:green tea>black tea,green tea>dark tea,oolong tea>black tea(P<0.05);Vitamin C:green tea>black tea,green tea>oolong tea,green tea>dark tea(P<0.05);Vitamin E:oolong tea>green tea>dark tea>black tea(P<0.05);Copper:green tea>oolong tea,dark tea>black tea>oolong tea(P<0.05);Zinc:green tea>black tea>dark tea>oolong tea(P<0.05);Selenium:oolong tea>black tea>dark tea,oolong tea>black tea>green tea(P<0.05);Manganese:dark tea>green tea,oolong tea>green tea(P<0.05);Calcium:dark tea>black tea>oolong tea>green tea(P<0.05);Magnesium:dark tea>oolong tea>black tea,dark tea>green tea>black tea(P<0.05).Different teas have different contents of bioactive substances and each has its own advantages,so you can choose the right variety of tea according to your own health needs.
