大河乌猪肉营养成分、氨基酸、脂肪酸的比较研究

摘要 本试验对大河乌猪(DW)、“约长大乌”杂交猪(YLDW)、“洋三元”杂交猪(DLY)三个组别140 kg肉猪的猪肉营养成分、氨基酸、脂肪酸进行了比较研究,结果显示:大河乌猪(DW)背最长肌干物质含量和肌内脂肪含量分别为(31.37±1.99)%和(5.87±0.99)%,显著(P<0.05)和极显著(P<0.01)高于洋三元(DLY);氨基酸总量、风味氨基酸和必须氨基酸含量分别为(22.70±0.54)%、(7.79±0.13)%和(7.38±0.14)%,显著高于洋三元(DLY)(P<0.05);不饱和脂肪酸含量为(59.693±2.977)%,高于洋三元(DLY),但差异不显著(P>0.05);ω-3脂肪酸含量(0.427±0.085)%,显著高于洋三元(DLY)(P<0.05);胆固醇含量(40.97±7.43)mg/100 g,显著低于洋三元(DLY)(P<0.05)。 This experiment conducted a comparative study on the nutritional composition,amino acids,and fatty acids of 140 kg pork from three experimental groups of Dahe black pig(DW),Yorkshire×Landrace×Dahe black pig(YLDW),and Duroc×Landrace×Yorkshire(DLY),The results show:The dry matter and intramuscular fat of the longissimus dorsi muscl of Dahe black pig(DW)were(31.37±1.99)%and(5.87±0.99)%,respectively,significantly(P<0.05)and extremely significantly(P<0.01)higher than those of the DLY pig;The total amino acid content,flavor amino acid content,and essential amino acid content were(22.70±0.54)%,(7.79±0.13)%,and(7.38±0.14)%,respectively,significantly higher than those of DLY pig(P<0.05);The content of unsaturated fatty acids were was(59.693±2.977)%,which was higher than DLY pig,but the difference was not significant(P>0.05);The content of omega-3 fatty acids was(0.427±0.085)%,which is significantly lower than DLY pig(P<0.05);The cholesterol content is(40.97±7.43)mg/100 g,which is significantly lower than DLY pig(P<0.05).
