基于CiteSpace的食品功能因子研究可视化分析

摘要 以2000-2022年WOS数据库发表的食品功能因子文献为数据源,利用CiteSpace软件对发文量、作者、机构、国家、研究热点、研究前沿、文献/作者/期刊共被引进行分析。结果表明:食品功能因子发文量呈增加趋势,发文量最高的作者、机构和国家分别是Fereidoon Shahidi教授、西班牙高等科研理事会和中国;研究热点为二十碳五烯酸和微藻源食品功能因子的包埋、市场趋势及对Ⅱ型糖尿病的调节;研究前沿为生物纳米颗粒与肠道菌群的相互作用及对细胞炎症的影响,以及抗性淀粉的流变学和理化性质。Fereidoon Shahidi教授、《Journal of Agricultural and Food Chemistry》和Gibson Glenn R(2017)分别为高被引作者、高被引期刊和高被引文献。CiteSpace软件能全面呈现食品功能因子领域的研究现状、热点前沿等信息,可为国内食品功能因子研究提供参考。 With the food functional factor literature published in WOS database from 2000 to 2022 as the data source,CiteSpace software was used to analyze the number of publications,authors,institutions,countries,research hotspots,research frontiers,and literature/author/journal co-citations.The results showed that the number of publications on food function factors showed an increasing trend,and the authors,institutions and countries with the highest number of publications were Professor Fereidoon Shahidi,the Spanish Council of Higher Research and China.The research focused on the inclusion of eicosapentaenoic acid and microalgaederived food functional factors,market trends and regulation of type 2 diabetes mellitus.The research frontiers included the interaction of biological nanoparticles with intestinal flora and their effects on cellular inflammation,as well as the rheological and physicochemical properties of resistant starch.Prof.Fereidoon Shahidi,Journal of Agricultural and Food Chemistry,and Gibson Glenn R(2017)were highly cited authors,highly cited journals,and highly cited articles,respectively.CiteSpace software could comprehensively present the research status,hot frontier and other information in the field of food functional factors,and provide references for domestic research on food functional factors.
