茶树花黄酮-玉米醇溶蛋白-果胶纳米颗粒制备及其抗氧化活性研究

摘要 玉米醇溶蛋白-果胶构造的包埋体系可提高生物活性物质的稳定性,延长其抗氧化活性。该研究以茶树花黄酮为原料,通过反溶剂法结合静电沉积法制备茶树花黄酮-玉米醇溶蛋白-果胶纳米颗粒(tea flower flavonoids zein-pectin nanoparticles,FZP-NPs),通过扫描电子显微镜、透射电子显微镜、傅里叶变换红外光谱和差示扫描量热法等技术对纳米颗粒的表观形貌、理化特性、结构进行分析,利用DPPH法和ABTS法对纳米颗粒的抗氧化活性进行评估。结果表明,FZP-NPs包埋率大于96%,粒径为(238±4.55)nm,形状为球形;氢键、疏水相互作用是玉米醇溶蛋白与茶树花黄酮形成纳米颗粒的主要作用力。包埋增强了茶树花黄酮的稳定性,并延长了其抗氧化活性,该研究为茶树花黄酮的综合利用提供了理论参考。 The zein-pectin embedded system can improve the stability of bioactive material and prolong its antioxidant activity.In this study,tea flower flavonoids zein-pectin nanoparticles(FZP-NPs)were prepared by a reverse solvent method combined with the electrostatic deposition method.The apparent morphology,physical and chemical characteristics,and structure of the nanoparticles were analyzed by scanning electron microscopy,transmission electron microscope,Fourier transform infrared spectroscopy,and differential scanning calorimetry.The antioxidant activity was determined by the DPPH and ABTS assay.Results showed that the encapsulation efficiency of FZP-NPs was higher than 96%and the particle sizes were around(238±4.55)nm.Hydrogen bond and hydrophobic interaction was the main force for the formation of nanoparticles between zein and tea flower flavonoids.The stability of tea flower flavonoids was increased and antioxidant activity was prolonged after embedding.This study provides a theoretical reference for the comprehensive utilization of tea flower flavonoids.
