摘要
本文对张掖市现制现售调配饮料中菌落总数、沙门氏菌含量等进行测定,分析不同品牌、不同种类、不同甜度调配饮料中的微生物含量,以期为加强市场监管提供理论参考。结果表明,奶茶饮料的污染程度最高,高甜度饮料的污染程度相对较高,纯茶饮料的污染程度最低;指示菌中大肠菌群、霉菌均有不同程度检出,致病菌只有金黄色葡萄球菌有检出,其余均未检出。张掖市部分现制现售调配饮料中指示菌含量较高且检出致病菌金黄色葡萄球菌,这可能与原料、包装、水及操作人员等的微生物污染有关。
In this paper,the total number of colonies and the content of Salmonella in the prepared beverages sold in Zhangye city were determined,and the microbial content in the prepared beverages of different brands,different types and different sweetness was analyzed,in order to provide theoretical reference for strengthening market supervision.The results showed that the pollution degree of milk tea beverage was the highest,the pollution degree of high-sweetness beverage was relatively high,and the pollution degree of pure tea beverage was the lowest.Coliforms and molds in the indicator bacteria were detected to varying degrees.Only Staphylococcus aureus was detected,and the rest were not detected.The content of indicator bacteria in some ready-to-sell beverages in Zhangye city was high and the pathogenic bacteria Staphylococcus aureus was detected,which may be related to the microbial contamination of raw materials,packaging,water and operators.
