摘要
辣椒作为我国广泛栽培的农作物之一,其果实可作为蔬菜、调料品,果实中的辣椒素含有抗炎、抑菌、降血脂及杀虫趋避等功能。围绕辣椒素的化学结构和提取方法、生物活性及应用研究进行了阐述,旨在为辣椒素的综合利用提供参考依据,进一步拓宽辣椒开发利用资源。
As one of the widely cultivated crops in China,capsaicin fruits can be used as vegetables and spices.Capsaicin in fruits contains anti-inflammatory,bacteriostatic,hypolipidemic,insecticidal and repellent functions.In this paper,the chemical structure,extraction method,biological activity and application of capsaicin were discussed in order to provide reference for the comprehensive utilization of capsaicin and further expand the resources of exploitation and utilization of capsaicin.
