近红外光谱在白酒检测中的研究进展

摘要 在白酒酿造过程中,对酿酒原料、酒醅发酵、酒体质量等的分析检测一直是保证白酒质量的关键技术,传统的分析检测技术费时费力、重复性较差、测试成本高。相比于传统的分析检测技术,近红外光谱分析检测技术因具备工作简单、重复性高、快速无损、环保安全和能够实时在线监测等优点,在白酒领域中的运用更加广泛。通过近红外光谱对白酒酿造过程中各关键技术指标进行实时快速检测,对指导白酒生产、改善白酒质量和产酒率有着十分重要的作用。文章对近红外光谱技术进行了简介并综述了近红外光谱技术在白酒酿酒原料检测、酒醅发酵过程检测、白酒质量检测等领域的研究应用,并对今后近红外光谱技术在白酒检测中的实际应用情况和研究方向进行了展望。 In the production process of Baijiu,the analysis and testing of raw materials,fermented grains and liquor body is key to the quality control of Baijiu.The traditional analysis and testing techniques are time-consuming and laborious,with poor repeatability and high testing cost.Compared with the traditional techniques,near infrared spectroscopy has the advantages of simple operation,high repeatability,rapid and non-destructive detection,environmental protection,and real-time online monitoring.The rapid detection of the key technical indexes in the production process of Baijiu by near infrared spectroscopy is very important for the improvement of the yield and quality of Baijiu.This paper briefly introduces the near infrared spectroscopy technology,and reviews its application in the detection of raw materials,fermented grains and liquor body of Baijiu.The practical application and research direction of NIR in Baijiu industry in the future are prospected.
