显齿蛇葡萄叶提取物体外抗氧化效果研究

摘要 为研究显齿蛇葡萄叶提取物的体外抗氧化效果,以维C和茶多酚为对照,分别测定了3种抗氧化物对ABTS自由基、超氧阴离子、DPPH自由基、羟基等的清除率。结果表明,3种抗氧化物的清除率均随其质量浓度的增加而增大,抗氧化效果随其质量浓度的增加而增强。当质量浓度为150μg/mL时,3种抗氧化物对ABTS自由基清除率均为99%,三者抗氧化效果相同;显齿蛇葡萄叶提取物抗超氧阴离子氧化效果远超维C和茶多酚,最高清除率为86.31%;不同质量浓度的显齿蛇葡萄叶提取物对DPPH自由基的清除率均高于90%;低质量浓度时,显齿蛇葡萄叶提取物的抗羟基自由基氧化效果最好,当质量浓度超过250μg/mL时,其与茶多酚具有相同的抗氧化效果。研究结果可为显齿蛇葡萄叶提取物在食品抗氧化剂研究与开发方面提供参考。 In order to study the in vitro antioxidant effect of extractions from Ampelopsis grossedentata leaves,the scavenging rates of three antioxidants on free radicals such as ABTS,superoxide anion,DPPH,and hydroxyl were measured,using Vitamin C and tea polyphenol as controls.The results showed that the scavenging rates of all three antioxidants increased with their concentrations,and the antioxidant effects were enhanced with their concentrations.When the concentration was 150μg/mL,the scavenging rates of the three antioxidants on ABTS radicals was 99%,and the antioxidant effects of the three substances were the same;In terms of scavenging superoxide anions,the antioxidant effect of the extractions from Ampelopsis grossedentata leaves far exceeded that of Vitamin C and tea polyphenol,with the highest scavenging rate of 86.31%;the scavenging rate of different concentrations of extractions from Ampelopsis grossedentata leaves was higher than 90%of the DPPH free radical;the best antioxidant effect against hydroxyl radical oxidation was observed in low concentrations of extractions from Ampelopsis grossedentata leaves,and when the concentration was more than 250μg/mL,it had the same antioxidant effect as that of tea polyphenols.The research results can provide reference for the research and development of food antioxidants in the extract of Ampelopsis grossedentata leaves.
