胶原蛋白-壳聚糖生物材料的研究进展

摘要 胶原蛋白与壳聚糖作为重要的天然生物质来源,二者复合形成的生物材料由于具有生物相容性、抗氧化能力、抗菌性等多种特性而备受关注。然而,胶原蛋白-壳聚糖生物材料的弱机械强度限制了其应用范围。近年来,研究者们致力于通过多种制备方式及改性方法来提高其理化性质,使其被广泛应用于生物医药与食品领域。本文基于胶原蛋白-壳聚糖生物材料的特性,对近年来其制备方法,如离子凝胶法、浇铸、纺丝、3D打印进行了概述,并对其在生物医药与食品领域的最新研究进展进行了总结。 Collagen and chitosan,as important natural biomaterial sources,have attracted considerable attention due to the various properties of the biomaterial formed by their combination,including biocompatibility,antioxidant capability,and antibacterial features.However,the weak mechanical strength of collagen-chitosan biomaterials has limited their applications.In recent years,researchers have been dedicated to enhancing their physicochemical prop⁃erties through various preparation and modification methods,aiming to broaden their utilization in the fields of bio⁃medicine and food.Based on the characteristics of collagen-chitosan biomaterials,this paper provided an overview of their preparation methods such as ion gelation,casting,spinning,and 3D printing in recent years.Additionally,it summarized the latest research developments in the biomedical and food fields involving these materials.
