预制菜食品安全情况与食品检测技术实践

摘要 近年来,预制菜快速普及,逐渐成为年轻人饮食的首要选择,随之而来的食品安全、营养健康等问题引起广泛关注。为了进一步确保食品安全与质量,相关部门及检测机构灵活利用多种先进技术对预制菜进行质量检测,获取预制菜内污染物、农药残留量、兽药残留量、真菌毒素和溶剂残留量等方面指标数据,分析预制菜安全性,便于及时发现安全隐患,加强对于预制菜安全的控制。本文简要分析预制菜食品安全情况,从多个角度入手对基于食品安全的预制菜食品检测技术实践进行深入探究。 In recent years,prefabricated dishes are rapidly becoming popular,and gradually become the primary choice of young people’s diet,and the ensuing problems such as food safety,nutrition and health and other issues have attracted wide attention.In order to further ensure the food safety and quality,the relevant departments and testing institutions flexible use of a variety of advanced technology of prefabricated vegetable quality testing,obtain prefabricated vegetable pollutants,pesticide residues,veterinary drug residues,mycotoxins,solvent residues index data,analysis of prefabricated vegetable safety,easy to timely find safe hidden danger,increase for prefabricated vegetable safety control.This paper briefly analyzes the food safety situation of prefabricated vegetables,and deeply explores the practice of prefabricated vegetables’food detection technology based on food safety from many angles.
