基于电化学生物传感器检测食源性致病菌的研究进展

摘要 由食源性致病菌引起的食品安全问题严重威胁人们的身体健康。传统检测方法越来越难以应对当下国内外市场中食品品类激增所带来的检测压力,高效、快速、准确地在食品样品中检测出食源性致病菌成为食品安全领域亟待解决的新课题。电化学生物传感器灵敏度高、操作简单,可实现在线检测、快速检测、痕量检测,目前被广泛应用于食品安全监管方向的研究与开发。本文在介绍电化学生物传感器基本原理和分类的基础上,重点对比与讨论近期国内外关于食源性致病菌快速检测中的突出研究成果,并展望其研究的应用前景。 Food safety issues caused by foodborne pathogens pose a serious threat to people’s health.The pressure brought by the proliferation of food categories in the domestic and international markets,detect foodborne pathogens efficiently,rapidly and accurately in food samples has become a new task in the area of food safety that needs to be solved urgently.Electrochemical biosensors,with high sensitivity and simple operation,can realise on-line detection,rapid detection and trace detection,and are now widely used in research and development in the direction of food safety supervision.This paper states the fundamental principles and classification of electrochemical biosensors,focuses on comparing and discussing the recent outstanding research results in the rapid detection of foodborne pathogens domestically and internationally,and prospects for their research and application.
