不同灭菌方式对当归粉阿魏酸保留率的影响

摘要 目的考察不同灭菌方式对当归粉的灭菌效果和有效成分阿魏酸保留率的影响。方法考察湿热灭菌法、干热灭菌法、高温瞬时灭菌法3种方式,对比当归粉灭菌前后的物理性状、微生物数量和阿魏酸保留率的变化。结果当归粉经不同灭菌方式灭菌后,颜色均有不同程度加深,微生物数量均符合规定,阿魏酸均有不同程度损失。而在保证灭菌效果合格的情况下,采用高温瞬时灭菌的当归粉的阿魏酸的保留率最高,可达90.0%以上。结论与湿热灭菌、干热灭菌方式对比,对于含热敏成分阿魏酸的当归粉,采用高温瞬时灭菌方式更具优势。采用高温瞬时灭菌方式,当归粉微生物数量在明显减少至规定限度内的同时,也能最大限度地保留有效成分阿魏酸含量,保证了当归粉的质量。 Objective To investigate the sterilization effect of different sterilization methods for Angelicae Sinensis Radix powder and the effect of different sterilization methods on retention rate of ferulic acid.Methods The physical properties,the number of microorganisms and the retention rate of ferulic acid of Angelicae Sinensis Radix powder before and after sterilization by wet heat sterilization,dry heat sterilization and high temperature instantaneous sterilization were compared.Results After sterilization in different ways,the color of the powder had different degrees of deepening,the number of microorganisms met the requirements,and ferulic acid had different degrees of loss. While under the condition ensuring that the sterilization effect was qualified, the retention rate of ferulic acid in the powder treated with high temperature instantaneous sterilization was the highest, which could reach more than 90.0 %. Conclusion Compared with wet heat sterilization and dry heat sterilization, high temperature instantaneous sterilization is more advantageous for Angelicae Sinensis Radix powder containing ferulic acid. By high temperature instantaneous sterilization, the number of microorganisms in Angelicae Sinensis Radix powder can be reduced to the specified limit, and the content of ferulic acid can be retained to the maximum, which ensures the quality of Angelicae Sinensis Radix powder.
