气调保鲜技术研究进展

摘要 概述气调保鲜技术在国内外的应用及发展现状,为气调保鲜技术研究提供新的思路。论述了气调保鲜技术国内外果蔬肉类的气调保鲜技术的研究进展以及气调保鲜技术与臭氧、大蒜提取物、植物精油等其他物理化学保鲜技术相结合的研究进展,综述了不同的气调保鲜包装原材料在食品保鲜保质中的不同效果,分析其特点并进行比较。各种气调保鲜技术对食品保鲜贮藏均有积极作用,找到其最优的气体比例可以更好地延长食品的贮藏期,新型气调保鲜包装材料更具有优势,气调保鲜技术还可以与模拟仿真进行结合,减少试验次数,节约成本,对气调保鲜技术的未来发展趋势进行展望。 Preservation technology of controlled atmosphere storage refers to a green preservation technology that achieves food preservation effects by adjusting different gas ratios under certain temperature and humidity conditions. This technology can better extend the storage period of food. This article reviews the research status of controlled atmosphere storage technology in the fields of fruits, vegetables, and meat both domestically and internationally, as well as the combination of controlled atmosphere storage technology with other preservation technologies such as ozone, irradiation, garlic extract,etc. It discusses the different effects of different controlled atmosphere storage packaging raw materials in food preservation and quality assurance, analyzes their characteristics, and compares them. It is found that new controlled atmosphere storage packaging materials have more advantages. And the article prospects the future development trend of modified atmosphere preservation technology.
