摘要
为提高益生菌在肠道内的微生态平衡,通过微胶囊技术将益生菌包埋于壁材溶液中,能够提高益生菌对外部恶劣环境的抵抗能力,有效增加益生菌的存活度,延长货架时间,并能缓解益生菌不抗胃酸和无法储存的问题,从而使益生功能得到有效发挥。文章对益生菌微胶囊技术、制备方法及其在益生菌产品的应用现状进行概述,以期为益生菌微胶囊的未来研究方向提供一些参考。
In order to improve the microecological balance of probiotics in the intestine, the probiotics are embedded in the wall material solution through microencapsulation technology, which can improve the resistance of probiotics to the external harsh environment, effectively increase the survival of probiotics, prolong the shelf time, and alleviate the problems that probiotics are not resistant to gastric acid and cannot be stored, so that the probiotic function can be effectively played. This article summarizes the technology, preparation methods and application status of probiotic microcapsules in probiotic products,in order to provide some references for the future research direction of probiotic microcapsules.
