食品理化检验环节中的质量影响因素分析

摘要 食品理化检验主要对食品营养成分及化学性污染情况进行评估,检验要求比较严格。对于营养成分含量不足、非法添加非食用物质、添加虚假营养成分和受污染等的食品,可通过理化检验进行鉴别和纠正。食品理化检验环节较多、步骤烦琐,检验结果易受多种因素的影响,如检验人员、检验环境、样品因素等,可能会导致检验项目出现假阳性、假阴性结果,错误的食品检验报告将直接或间接地影响后续工作。因此,在食品理化检验工作中,工作人员需要了解食品理化检验环节中的质量影响因素,这也是把控检验过程、提高理化检验水平的关键。 Food physical and chemical inspection mainly evaluates the nutritional composition and chemical contamination of food,and the inspection requirements are relatively strict.For foods with insufficient nutritional content,illegal addition of non edible substances,addition of false nutritional ingredients,and contamination,identification and correction can be carried out through physical and chemical testing.There are many physical and chemical inspection steps in food,and the inspection results are easily affected by various factors,such as inspection personnel,inspection environment,sample factors,etc.,which may lead to false positive or false negative results in inspection items.Incorrect food inspection reports will directly or indirectly affect subsequent work.Therefore,in food physical and chemical inspection work,staff need to understand the quality influencing factors in the food physical and chemical inspection process,which is also the key to controlling the inspection process and improving the level of physical and chemical inspection.
