随着食品安全问题的日益突出,传统的微生物检测方法已无法满足现代社会对快速、准确检测的需求。微生物快速检测技术,包括免疫学检测、基因探针和传感器技术,为食品安全保障提供了新途径。本文介绍了这些技术在肉类、乳制品和果蔬中的具体应用,并探讨了适用于不同食品基质的技术选择策略。通过优化和组合不同检测方法,能够提高检测的灵敏度和特异性,为食品安全检测提供可靠保障。
With the increasing prominence of food safety issues,traditional microbial detection methods can no longer meet the needs of modern society for fast and accurate detection.Microbial rapid detection technology,including immunological testing,gene probes,and sensor technology,provides new avenues for food safety assurance.This article reviews the specific applications of these technologies in meat,dairy products,and fruits and vegetables,and explores technology selection strategies applicable to different food matrices.By optimizing and combining different detection methods,the sensitivity and specificity of detection can be improved,providing reliable guarantees for food safety testing.
