不同相对分子质量酵母甘露多糖对乳酸菌影响的研究

摘要 选定4种不同相对分子质量酵母甘露多糖,考察其对3种乳酸菌生长规律、模拟肠道耐受力、代谢产物以及菌体结构的影响。结果表明:不同相对分子质量酵母甘露多糖YM-30、YM-50、YM-70和YM-90对嗜酸乳杆菌、植物乳杆菌和乳双歧杆菌的生长均有促进作用,活菌数比对照组分别增加了10.02%、10.53%和11.35%;添加最适相对分子质量酵母甘露多糖后增强了3种乳酸菌对模拟肠道耐受力;同时添加最适多糖后3种菌产乳酸质量浓度分别比对照组高出16.9%、11.5%、10.6%;电镜结果显示酵母甘露多糖对3种乳酸菌表面蛋白合成均具有促进作用。以上表明特定相对分子质量酵母甘露多糖对益生菌的生长有明显的促进作用,且作用效果较为稳定。 Four kinds of yeast mannose polysaccharides with different relative molecular mass were selected to investigate the effect of their growth regularity,simulated intestinal tolerance,metabolites and bacterialcell structure differences against three kinds of lactic acid bacteria.The results showed that yeast mannose polysaccharides with different relative molecular mass namely YM-30,YM-50,YM-70 and YM-90 could promote the growth of Lactobacillus acidophilus,Lactobacillus plantarum and Bifidobacterium lactis,and the number of viable bacteria increased by 10.02%,10.53%and 11.35%compared with the control group,respectively.Addition of yeast mannose polysaccharides with optimal relative molecular mass increased the tolerance of three kinds of lactic acid bacteria to simulated intestinal tract.The mass concentrations of lactic acid produced by the three strains adding the most suitable polysaccharides were 16.9%,11.5%and 10.6%higher than that of the control group,respectively.The results of electron microscope showed that the yeast mannose polysaccharides promoted the surface protein synthesis of the three lactic acid bacteria.The results above indicated that the specific relative molecular mass of yeast mannose polysaccharides could obviously promote the growth of probiotics,and the effect was relatively stable.
