黑木耳Y9液体发酵产物冻干粉成分及生物活性分析

摘要 为明确黑木耳Y9发酵产物的生物活性物质含量及功能,分别对黑木耳Y9液体发酵产物冻干粉中蛋白质、纤维、多糖、黑色素、类黄酮的含量以及抗氧化、抗肿瘤活性进行测定。结果表明,黑木耳Y9发酵产物冻干粉的粗蛋白含量为135.04 mg·g^(-1),粗纤维含量为39.24 mg·g^(-1),粗多糖含量为77.04 mg·g^(-1),黑色素含量为2.80 mg·g^(-1),总黄酮含量为4.72 mg·g^(-1)。发酵产物冻干粉对DPPH·、O_(2)·^(-)和·OH清除率的IC50值分别为4.002、4.345、8.623 mg·mL^(-1),对胃癌细胞(BGC-823)和乳腺癌细胞(MCF-7)抑制率的IC_(50)值分别为9.775、3.995 mg·mL^(-1)。黑木耳Y9发酵产物含有丰富的生物活性物质,具有较强的抗氧化和抗肿瘤活性。 To clarify the bioactive components contents and functions of the fermentation product from Auricularia heimuer,the contents of protein,fiber,polysaccharide,melanin and flavonoid,as well as the antioxidant and anticancer activities of the freeze-dried powder of A.heimuer Y9 liquid fermentation product were determined.The results showed that,in A.heimuer Y9 fermentation product freeze-dried powder,the crude protein content was 135.04 mg·g^(-1),the crude fiber content was 39.24 mg·g^(-1),the crude polysaccharide content was 77.04 mg·g^(-1),the melanin content was 2.80 mg·g^(-1),and the total flavonoid content was 4.72 mg·g^(-1).The IC_(50) values of DPPH·,O_(2)·^(-)and·OH scavenging rates of the fermentation product freeze-dried powder were 4.002、4.345 and 8.623 mg·mL^(-1),respectively.The IC_(50) values of the inhibition rates against gastric cancer cells(BGC-823)and breast cancer cells(MCF-7)were 9.775 and 3.995 mg·mL^(-1),respectively.The fermentation product were rich in bioactive components with strong antioxidant and antitumor activities.
