江西省4种特色中蜂蜜的理化指标及其品质分析

摘要 采集江西省4种特色中蜂蜜(树参蜜、蜜橘蜜、野桂花蜜和五倍子蜜)样品共23份,对其水分还原糖(果糖和葡萄糖)、蔗糖、淀粉酶值、羟甲基糠醛含量及酸度7种理化指标,氯霉素、链霉素、四环素族3类抗生素残留量,以及碳-4植物糖含量进行检测。系统分析和评价了4种蜂蜜的理化指标特性,并与现有标准或文献进行比较分析。结果表明4种中蜂蜜样品的水分含量为18.90%~19.56%、浓度为41.78~42.08°Bé、淀粉酶值为7.08~13.36 mL/(g·h)、果糖和葡萄糖含量均>68.00g/100g、蔗糖含量均<1.35g/100g、羟甲基糠醛含量均为<8.00 mg/kg、酸度均<16.50mL/kg,碳-4植物糖含量均<7,氯霉素、链霉素和四环素族抗生素残留量均未检出,各项指标均优于国家标准(GB 14963-2011和GH/T18796-2012),4种中蜂蜜品质整体良好,且各蜜种蜂蜜又有各自独特特征。 The study analyzed the quality of four kinds of Apis cerana honey samples on Dendropanax d entiger honey,Sweet orange honey,Osmanthus honey and Galla honey from Jiangxi Province in 2023.According to the method specified in the national standard GB 14963-2011 and GH/T 18796-2012,the moisture content,reducing sugar(fructose and glucose),sucrose,amylasevalue,hydroxymethylfurfural content and acidity,in 23 samples of Apis cerana honey on Dendropanax dentiger honey,Sweet orange honey,Osmanthus honeyandGallahoney,as well as the residual amount of chloramphenicol,streptomycin and tetracycline antibiotics,a,nd the content of carbon-4 plant sugar were detectedThe results showed that the moisturecontent,concentration and amylase value ofthe four kinds of Apis cerana honey samples were 18.90%~19.56%,41.78~42.08°Bé and 7.08~13.36 mL/(g·h)respectively,the reducing sugar(fructose and glucose)content were greater than 68.00 g/100g,the sucrose content were less than 1.35 g/100g,the hydroxymethyl furfural content were less than 8.00 mg/kg,the acidity were less than 16.50 mL/kg and the carbon-4 plant sugar content ware less than 7i,t was superior to the requirementsofthe nationalstandard GB 14963-2011 and GH/T 18796-2012.At the same time,theresiduesofchloramphenicol,streptomycin and tetracycline antibiotics in honey samples were not detected.On the whole,the quality of four kinds of Apis cerana honey were well.
