葡萄皮渣中可溶性膳食纤维的酸法提取工艺优化

摘要 对酸法提取葡萄皮渣中可溶性膳食纤维的工艺进行优化。以葡萄皮渣为原料,采用酸法从葡萄皮渣中提取可溶性膳食纤维,在单因素试验基础上进行正交试验,确定该法的最佳工艺组合。试验结果表明,利用酸法提取可溶性膳食纤维的最优组合为:盐酸浓度0.40 mol/L,水浴温度85℃,提取时间80 min,料液比1∶20,在该条件下可溶性膳食纤维得率最高,为6.07%。采用酸法从葡萄皮渣中提取可溶性膳食纤维,不仅可以对葡萄皮渣进行深层次处理加工,还可以避免环境污染,有利于提升葡萄的附加值,同时为酸法提取可溶性膳食纤维提供一定的技术支持。 To optimize the extraction of SDF from grape skin residue by acid method.Orthogonal test was carried out on the basis of single factor to determine the best process combination.the optimal combination of acid extraction was as follows:hydrochloric acid concentration 0.40 mol/L,water bath temperature 85℃,extraction time 80 min,solidliquid ratio 1∶20.Under this condition,the yield of SDF was the highest,which was 6.07%.The method is feasible.It can not only carry out deep processing of grape skin residue,but also avoid environmental pollution,which is beneficial to enhance the added value of grape,and provide certain technical support for acid extraction of SDF.
