诺丽枸杞运动饮料研制及抗疲劳功能的研究

摘要 以诺丽果和枸杞为主要原料研制一款新型运动饮料,通过响应面设计优化确定了诺丽果汁、枸杞汁、木糖醇、柠檬酸的最佳添加量,并通过小鼠负重游泳试验探究饮料的抗疲劳特性。结果表明,运动饮料的最佳工艺参数为诺丽果汁添加量14.68%,枸杞汁添加量20.82%,柠檬酸添加量0.16%,木糖醇添加量12.14%,对感官评分影响程度依次为柠檬酸添加量>木糖醇添加量>枸杞汁添加量>诺丽果汁添加量。对上述饮料的抗疲劳功能进行研究,结果表明小鼠连续灌胃上述饮料30 d后,平均游泳时间比对照组明显延长,说明诺丽果枸杞运动饮料具有显著抗疲劳的功效。 A new type of beverage was developed by using noni and wolfberry as the main raw materials.The optimal addition amount of noni juice,wolfberry juice,xylitol and citric acid were optimized by response surface design.And the anti-fatigue function of the sport drinks was studied by mice load swimming.The results showed that the optimal conditions for the noni and wolfberry sports drink were 14.68%noni juice,20.82%wolfberry juice,0.16%citric acid and 12.14%xylitol.The degree of influence on the sensory score was citric acid>xylitol>wolfberry juice>noni juice.The anti-fatigue function of the above drinks was studied,and the results showed that after 30 days of continuous gavage of the above drinks,the average swimming time of mice was significantly longer than that of the control group.which indicated that noni and wolfberry sports drink had a certain anti-fatigue effect.
