杂色鲍(H.diversicolor Reeve)肌肉营养成分分析与品质评价

摘要 采用国标法检测潮州地区养殖杂色鲍(H.diversicolor Reeve)肌肉的营养成分、氨基酸组成、脂肪酸组成及部分矿物元素含量。结果表明,杂色鲍肌肉中粗蛋白、粗脂肪、粗灰分、水分和总糖的含量分别为14.95,0.50,0.98,81.65,1.40 g/100 g;其肌肉中共检测出16种氨基酸,氨基酸总量为(12.7±0.1) g/100 g,7种必需氨基酸含量总和占29.45%,5种鲜味氨基酸含量总和占56.02%;氨基酸评分(AAS)和化学评分(CS)显示,杂色鲍肌肉的第一限制氨基酸为蛋氨酸与半胱氨酸;多不饱和脂肪酸含量丰富,占总脂肪酸含量41.65%,其中DHA+EPA含量占总量的6.03%;检测杂色鲍肌肉中钙、铁、锌元素发现,钙元素含量最高,锌元素最低。杂色鲍肌肉高蛋白、低脂肪、营养价值高且味道鲜美,是一种优质的海洋蛋白资源。 The nutrient composition,amino acid composition,fatty acid composition and some mineral elements of the muscle of H.diversicolor Reeve cultured in Chaozhou area were determined according to the national standard method.The results showed that the contents of crude protein,crude fat,crude ash,moisture and total sugar in the muscle of H.diversicolor Reeve were 14.95,0.50,0.98,81.65,1.40 g/100 g,respectively.In the muscle of H.diversicolor Reeve,a total of 16 amino acids were detected,and the total amino acid content was(12.7±0.1)g/100 g,with the total content of 7 essential amino acids accounting for 29.45%and the total content of 5 delicious amino acids accounting for 56.02%.The amino acid score(AAS)and chemical score(CS)showed that methionine and cysteine were the first limiting amino acids in the muscles of H.diversicolor Reeve.Polyunsaturated fatty acids were abundant and accounted for 41.65%of the total fatty acid content,with DHA+EPA content accounting for 6.03%of the total.Examination of the muscle of H.diversicolor Reeve for calcium,iron and zinc revealed that it had the highest calcium content and the lowest zinc content.The muscle of H.diversicolor Reeve was high in protein,low in fat,nutrient-rich and palatable and represents a marine protein source with high-quality.
