噬菌体裂解酶抑菌功能与应用研究进展

摘要 近年来,食品工业微生物污染和医疗领域耐药菌问题的频频出现,使得新型高效的天然防腐剂及抗菌药物的开发成为研究热点。噬菌体裂解酶是一类细菌细胞壁水解酶,可通过水解细菌细胞壁使细菌裂解进而抑制细菌生长,具有高效裂解性和高度特异性。研究发现,噬菌体裂解酶能够抑制食品中革兰氏阳性菌的生长,但不破坏食品中其他微生物群落,以及食品的结构和感官;同时研究表明,噬菌体裂解酶可裂解部分对抗生素已产生耐药性的细菌,具有作为新型食品安全制剂的潜力。主要对噬菌体裂解酶的抑菌功能及应用进行综述,以期为噬菌体裂解酶在食品工业及医疗领域中的研究和应用提供参考。 In recent years,the frequent emergence of microbial contamination in the food industry and the problem of dr-ug-resistant bacteria in the medical field have made the development of new and efficient natural preservatives and antibacterial drugs a research hotspot.Bacteriophage lyase is a class of bacterial cell wall hydrolases,which can inhibit bacterial growth by hydrolyzing bacterial cell walls,with high efficiency and high specificity.The study found that phage lyase could inhibit the growth of gram-positive bacteria in food,but did not destroy other microbial communities in food and the structure and sensory of food;At the same time,studies had shown that phage lyase can cleave some bacteria that had developed resistance to antibiotics,and had the potential to be used as a new food safety agent.This paper mainly reviewed the antibacterial function and application of phage lyase,in order to provide reference for the research and application of phage lyase in the food industry and medical fields.
