摘要 本研究旨在探讨不同葡萄品种对葡萄酒品质及风味的影响。通过对白苏维翁、赤霞珠和梅洛3种葡萄品种酿制的葡萄酒进行理化指标和感官评定分析,研究不同葡萄品种在成分构成上存在的显著差异。本研究为葡萄酒产业的可持续发展和品质提升提供了理论支撑,同时也为消费者在选择和品鉴葡萄酒时提供了有益的参考。未来,通过进一步的研究和技术创新,有望发现更多优质的葡萄品种,进一步丰富葡萄酒的风味和品质,推动葡萄酒产业的持续发展。 The purpose of this study was to investigate the effects of different grape varieties on wine quality and flavor.Through the analysis of physical and chemical indexes and sensory evaluation of three grape varieties of Sauvignon blanc,Cabernet Sauvignon and Merlot,there are significant differences in the composition of different grape varieties.This study provides theoretical support for the sustainable development and quality improvement of the wine industry,and also provides a useful reference for consumers when choosing and tasting wine.In the future,through further research and technological innovation,it is expected to find more high-quality grape varieties,further enrich the flavor and quality of wine,and promote the sustainable development of the wine industry.
