摘要
食品安全风险评估是一种可用于保障食品供应链中消费者健康的科学方法。该方法的关键是确定、评估和控制食品的潜在风险。此外,由于国际贸易和食品工业的不断发展,与食品安全问题相关的案例也越来越多,因此,研究食品安全风险评估方法和监测程序至关重要。本研究介绍并确定了当前监测食品安全风险的主要技术和方法,同时确定了其在各种情况下的准确性和适用性水平。研究的目的是通过建立风险评估框架,使食品安全管理风险评估更加科学化、系统化,从而提高食品安全信息的公开程度。
Food safety risk assessment is a scientific approach that can be used to safeguard the health of consumers in the food supply chain.The key to this approach is to identify,assess and control the possible risks of eating food.In addition,due to the continuous development of international trade and the food industry,there are more and more cases related to food safety issues,so it is essential to study food safety risk assessment methods and monitoring procedures.The study introduces and identifies the main current techniques and methods for monitoring food safety risks,while determining their level of accuracy and applicability in a variety of situations.The purpose of this study is to make the risk assessment of food safety management more scientific and systematic by establishing a risk assessment framework,so as to improve the openness of food safety information.
