EGCG和GA对玉米醇溶蛋白胶粒界面行为的影响

Effect of EGCG and GA on the Interfacial Behavior of Zein Colloidal Particles

摘要 将玉米醇溶蛋白(Zein)与含有不同数量邻苯三酚结构单元表没食子儿茶素没食子酸酯(Epigallocatechin gallate,EGCG)和没食子酸(Gallic acid,GA)相结合,用反溶剂法制备复合胶粒。采用动态光散射、界面膨胀流变及Langmuir-Blodgett(LB膜分析法)等手段,对比研究EGCG和GA对Zein胶粒的表面特性及界面行为的影响。结果表明,EGCG和GA通过暴露于Zein胶粒表面的亲水基团或掩蔽Zein部分疏水基团降低表面润湿性,且EGCG与Zein之间较强的相互作用使其形成较为致密的结构,显著降低Zein胶粒的粒径。同时,研究发现复合胶粒表面疏水性的降低使得Zein胶粒由于较强疏水性而导致的较高界面吸附速率有所减缓,延长复合胶粒在油/水界面的吸附及重排时间,形成具有黏弹性的界面膜。 In this research,zein micelles by the antisolvent method were prepared combined with epigallocatechin gallate(EGCG)and gallic acid(GA),which contained various o-phenyltriol structural units.Dynamic light scattering,interfacial swelling rheology and Langmuir-Blodgett were used to comparatively study the effects of EGCG and GA on the surface properties and interfacial behavior of zein micelles.The results showed that EGCG and GA reduced the surface wettability by exposing the hydrophilic groups of zein micelles or masking hydrophobic groups of zein.The stronger interactions between EGCG and zein led to the formation of a denser structure,which significantly reduced the particle size of zein micelles.At the same time,the reduction of surface hydrophobicity of micelles slowed down the high interfacial adsorption rate of zein particles.This caused the strong hydrophobicity,and prolonged the adsorption and rearrangement time of the composite particles at the oil/water interface.And it also formed an interfacial membrane with viscoelasticity.
