摘要
过量活性氧会造成氧化应激,使食品、化妆品等发生不同程度的氧化而腐败变质。抗氧化剂的使用可以有效地减轻由过量活性氧带来的不良影响,但合成抗氧化剂的毒副作用较大,研究人员开始关注低毒高效的天然抗氧化剂。本综述对抗氧化剂的分类、植物提取物抗氧化活性成分、作用机制进行系统阐述,并介绍作者课题组目前在研究植物抗氧化成分研究方面的成果。
Excessive reactive oxygen species can cause oxidative stress,resulting in different degrees of oxidation and spoilage of food and cosmetics.The use of antioxidants can effectively reduce the adverse effects.However,the toxic side effects of synthetic antioxidants could not be neglected.Natural antioxidants with low toxicity and high efficiency has been focused.In this review,the classification of antioxidants,antioxidant active components and mechanism of action of plant extracts were systematically described,and the achievements of the author's research group in the study of antioxidant components in plants were introduced.
