微生物快速检测在农产品食品质量安全检验中的应用

摘要 近年来,我国农产品食品安全事故频发,微生物污染已成为农产品食品安全的主要隐患之一。微生物快速检测技术以其检测速度快、灵敏度高、特异性强等优势,在农产品食品安全检测中发挥着越来越重要的作用。本文简要介绍了酶联免疫吸附测定、核酸探针、生物传感器等几种主要的微生物快速检测技术,并探讨了其在蔬菜、水果、畜禽肉制品及水产品等农产品微生物检测中的应用。 In recent years,there have been frequent incidents of agricultural food safety accidents in China,and microbial contamination has become one of the main hidden dangers of agricultural food safety.Microbial rapid detection technology is playing an increasingly important role in agricultural food safety testing due to its advantages such as fast detection speed,high sensitivity,and strong specificity.This article briefly introduces several main microbial rapid detection technologies such as enzyme-linked immunosorbent assay,nucleic acid probes,and biosensors,and explores their applications in microbial detection of agricultural products such as vegetables,fruits,livestock and poultry meat products,and aquatic products.
