摘要
针对广州市食品安全监管面临的进口食品来源多样、供应链条长且环节多等复杂挑战,结合食品安全影响因素分析、层次分析法及动态风险评估模型,构建了全面的食品安全风险评估指标体系。评估结果显示,生物污染和化学污染权重较高,分别为0.25和0.20,是广州市食品安全的主要风险因素。应用该指标体系后,广州市某10个行政区2019—2021年的食品安全风险值从0.41显著下降至0.12,表明构建的食品安全风险评估指标体系有效识别了主要风险,为广州市食品安全监管提供了科学依据,但普适性需进一步验证。
In response to the complex challenges faced by Guangzhou’s food safety supervision,such as diverse sources of imported food,long supply chains,and multiple links,a comprehensive food safety risk assessment index system has been constructed by combining analysis of factors affecting food safety,analytic hierarchy process,and dynamic risk assessment model.The evaluation results show that biological pollution and chemical pollution have higher weights,at 0.25 and 0.20 respectively,and are the main risk factors for food safety in Guangzhou.After applying this indicator system,the food safety risk values of 10 administrative regions in Guangzhou from 2019 to 2021 significantly decreased from 0.41 to 0.12,indicating that,the food safety risk assessment index system effectively identified the main risks and provided scientific basis for food safety supervision in Guangzhou,but its universality needs further verification.
