色谱技术在白酒风味检测中的应用

摘要 白酒风味是体现白酒整体质量的重要因素,对消费者的选购有着直接的影响。但市面上不同香型的白酒风味存在较大差异,为了提升白酒的风味品质,有必要对白酒中重要风味物质进行解析。色谱技术在白酒中风味成分检测分析中展示出了较大的优势。因此,本文综述了色谱技术在白酒风味中检测方面的应用,旨在为提升白酒整体风味品质提供参考。 The flavor of Baijiu is an important factor reflecting the overall quality of Baijiu,which has a direct impact on consumers’purchase.However,the flavor of Baijiu with different flavor types on the market is quite different.In order to improve the flavor quality of Baijiu,it is necessary to analyze the important flavor substances in Baijiu.Chromatographic technology has shown great advantages in the detection and analysis of flavor components in Baijiu.Therefore,this paper reviewed the application of chromatography in the detection of Baijiu flavor,in order to provide a reference for improving the overall flavor quality of Baijiu.
