基于顶空-气相色谱-质谱联用法与感官评价分析图书中刺激性气味的组分

摘要 为明确图书中刺激性气味的来源,采用顶空-气相色谱-质谱联用法和感官评价结合的方法,对图书中挥发性化合物质进行研究。通过定量、定性分析和感官定量方法确定了产生刺激性气味的挥发性化合物并非为环保检测标准HJ 2503-2011中的16种可挥发性化合物,同时筛选出5种与图书中刺激性气味呈正相关的挥发性化合物。 In order to clarify the source of pungent odors in books,the volatile compounds in books were studied by combining headspace-gas chromatography-mass spectrometry and sensory evaluation.Quantitative,qualitative analysis and sensory quantitative methods were used to determine that the volatile compounds that produced pungent odors were not the 16 volatile compounds in the environmental protection testing standard HJ 2503-2011,andfive volatile compounds that were positively correlated with the pungent odors in the book were screened.
