摘要
为开发刺松藻应用潜力,采用纤维素酶酶解法提取刺松藻中可溶性蛋白。在单因素试验基础上,通过正交试验对提取工艺进行优化设计。结果表明,纤维素酶添加量为13%,酶解温度45℃,初始pH值6.0,酶解时间90 min时,提取液中蛋白质量浓度最高,为0.618 g/L,可为刺松藻作为食品原料进一步深加工提供参考。
In order to explore the application potential of Codium fragile,cellulase enzymolysis was used to extract soluble proteins from Codium fragile.On the basis of single factor experiment,orthogonal experiment was used to optimize the extraction process.The results showed that the maximum protein content was 0.618 g/L when the cellulase dosage was 13%with 45℃,the initial pH 6.0 and 90 min reaction time.This study could provide reference for the further processing of Codium fragile as food raw materials.
