摘要
随着现代食品工业的快速发展和消费者饮食结构的改变,预制菜不仅顺应了消费者的需求,也推动了食品行业的技术升级和转型发展。对我国预制菜的市场发展状况、产业链和分类进行了综述,并从政策扶持、B端需求和C端降本增效3个维度分析预制菜产业发展的驱动因素,针对我国预制菜产业在冷链建设和标准体系方面的问题提出相关建议,为未来预制菜领域的产品技术研发方向及产业的可持续发展提供参考。
With the rapid development of modern food industry and the change of consumers'dietary structure,pre-prepared dishes not only meet the demand of consumers,but also promote the technological upgrading and transformation of the food industry.This article reviewed the market development status,industry chain and classification of pre-prepared dishes in China,and analyzed the driving factors of the development of the pre-prepared dishes industry from 3 dimensions:policy support,B-side demand and C-side cost reduction and efficiency,and finally put forward relevant suggestions for the problems of China's pre-prepared dishes industry in cold chain construction and standard system,aiming to provide the direction of product technology research and development in the field of pre-prepared dishes in the future and the sustainable development of the industry reference.
