五个品种蛋鸭蛋品质比较分析

摘要 为比较不同品种蛋鸭蛋品质的差异性及相关性,试验随机选取300日龄绍兴鸭、金定鸭、山麻鸭、缙云麻鸭和褐色菜鸭五个品种蛋鸭鸭蛋各30个,进行蛋品质测定并进行比较分析和指标间的相关性分析。结果显示:缙云麻鸭的蛋壳强度与哈氏单位、蛋白高度、蛋黄重均显著性相关(P<0.05),蛋重与蛋黄重、蛋形指数间相关性极显著(P<0.01),其他四个品种的蛋壳强度与蛋壳厚度相关性极显著(P<0.01)、蛋重与蛋黄重相关性极显著(P<0.01);金定鸭、山麻鸭、缙云麻鸭和褐色菜鸭的哈氏单位与蛋白高度相关性极显著(P<0.01),且山麻鸭的哈氏单位、蛋白高度与蛋黄颜色显著性负相关(P<0.05);绍兴鸭、金定鸭、缙云麻鸭和褐色菜鸭的蛋白高度与其他蛋品质指标间的相关性显著或极显著(P<0.05或P<0.01)。差异性分析结果显示:金定鸭的蛋壳强度极显著高于褐色菜鸭(P<0.01),金定鸭的蛋重极显著高于山麻鸭、缙云麻鸭(P<0.01),绍兴鸭的蛋重极显著高于缙云麻鸭(P<0.01),绍兴鸭的哈氏单位极显著高于金定鸭(P<0.01),绍兴鸭的蛋黄重极显著高于山麻鸭、缙云麻鸭和褐色菜鸭(P<0.01),褐色菜鸭的蛋形指数极显著高于绍兴鸭、金定鸭和山麻鸭(P<0.01),五个品种鸭蛋的蛋白高度、蛋黄颜色和蛋壳厚度之间差异性不显著(P>0.05)。研究表明,五个品种鸭蛋的蛋品质指标间的相关性显著或极显著,具有不同的遗传潜能;绍兴鸭和金定鸭的鸭蛋蛋品质明显优于山麻鸭、缙云麻鸭和褐色菜鸭。 In order to compare the difference and correlation of egg quality among different breeds of laying ducks,a total of 30 eggs were randomly selected from Shaoxing duck,Jinding duck,Shanma duck,Jinyun Ma duck and Brown Tsaiya duck at 300 days of age.Correlation analysis showed that the egg yolk color,egg yolk weight,egg shape index and eggshell thickness of the five breeds had no significant correlation with other egg quality indexes.The eggshell strength of Jinyun Ma duck was significantly correlated with Haugh unit,albumen height and yolk weight(P<0.05),egg weight was significantly correlated with yolk weight and egg shape index(P<0.01),the eggshell strength of the other four breeds was significantly correlated with eggshell thickness(P<0.01),egg weight and yolk weight were significantly correlated(P<0.01).The unit of Jinding duck,Shanma duck,Jinyun Ma duck and Brown Tsaiya duck were highly correlated with protein height(P<0.01),and the Haugh unit and albumen height of shan-ma duck were negatively correlated with yolk color(P<0.05).The protein height of Shaoxing duck,Jinding duck,Jinyun Ma duck and Brown Tsaiya duck was significantly or very significant correlated with other egg quality indexes(P<0.05 or P<0.01).The dif-ference analysis showed that the eggshell strength of Jinding duck was significantly higher than that of Brown Tsaiya duck(P<0.01),the egg weight of Jinding duck was significantly higher than that of Shanma duck and Jinyun duck(P<0.01),the egg weight of Sha-oxing duck was significantly higher than that of Jinyun Ma duck(P<0.01),the Haugh unit of Shaoxing duck was significantly high-er than that of Jinding duck(P<0.01),the yolk weight of Shaoxing duck was significantly higher than that of Shanma duck,Jinyun Ma duck and Brown Tsaiya duck(P<0.01),the egg shape index of Brown Tsaiya duck was significantly higher than that of Shaox-ing duck,Jinding duck and Shanma duck(P<0.01),there were no significant differences in protein height,yolk color and eggshell thickness among the five breeds(P>0.05).In conclusion,the correlation between egg quality indexes of the five breeds of duck eggs was significant or extremely significant,and they had different genetic potential.The egg quality of Shaoxing duck and Jind-ing duck was better than that of Shanma duck,Jinyun duck and Brown Tsaiya duck.
