清洁型炭密集烘烤对烤后上部烟叶质量的影响

摘要 [目的]为清洁型炭密集烤房烘烤提供理论依据。[方法]以云烟87上部叶为试验材料,研究燃煤密集烤房(CK)和燃清洁型炭密集烤房(T)烘烤对烤后上部烟叶外观质量、常规化学成分、中性香气物质含量和感官质量的影响。[结果]T处理烤后烟叶外观质量和化学成分协调性相对较佳;在中性香气物质方面,T处理提高了烤后上部烟叶17种类胡萝卜素类降解产物,14种美拉德反应产物,2种类西柏烷类降解产物,3种苯丙氨酸裂解产物和新植二烯含量,致香物质总量增幅分别为38.59%、114.04%、50.91%、68.09%和25.66%,其中,美拉德反应产物是烤后上部烟叶香气物质含量增幅最大的一类物质;在感官质量评价方面,T处理提高了烤后上部烟叶香气质、香气量、吃味、杂气、刺激性得分,感官质量评价总分增幅为6.45%,工业可用性从B-提高到B+。[结论]采用燃清洁型炭密集烤房进行烤烟烘烤是可行的,是清洁型炭升级改造和开发应用的重要方向之一。 [Objective]To provide the theoretical basis for baking in clean carbon intensive grills.[Method]Taking the upper leaves of Yunyan 87 as experimental materials,the effects of coal-fired and clean carbon-fired bulk curing barn on appearance quality,conventional chemical composition content,neutral aroma substance content,neutral aroma substances and sensory quality of flue-cured tobacco leaves were studied.[Result]The results showed that the appearance quality and chemical composition coordination of flue-cured tobacco leaves treated with burning clean carbon with bulk curing barn were relatively better.Tobacco leaves cured by burning clean carbon with bulk curing barn could increase the contents of 17 kinds of carotenoid degradation products,15 kinds of maillard reaction products,2 kinds of cembratriendid alkyl degradation products,3 kinds of phenylalanine pyrolysis products and neophytadiene of neutral aroma substances,and the total amount of aroma substances in each category increased by 38.59%,114.04%,50.91%,68.09%and 25.66%,respectively.Among them,the Maillard reaction product is the largest increase in the content of aroma substances in the upper flue-cured tobacco leaves.In terms of sensory quality evaluation,tobacco leaves cured by burning clean carbon with bulk curing barn could improve the scores of aroma quality,aroma quantity,taste,offensive and irritancy,and the total score of sensory quality evaluation increased by 6.45%.[Conclusion]It is feasible to use clean carbon with bulk curing barn for flue-cured tobacco leaves curing,and it is one of the important directions for the upgrading,development and application of clean carbon.
